- 1 – 12″ – 14″ pizza crust (homemade or store bought)
- 1 – chicken breast
- 1/2 tbsp. olive oil
- salt and pepper to taste
- approx. 3/4 c. pesto sauce (I used store bought)
- 1 to 1 1/2 c. shredded mozzarella
- chopped onions, bell peppers, etc. as desired
Preheat oven to temperature required by the recipe or package.
Cube the chicken, season to taste with salt and pepper, and cook in the skillet with the olive oil until no pink remains in the middle of the pieces and the juices run clear.
Chop vegetables. I think I sauteed mine for a few minutes to soften them a bit.
After all the toppings are ready, roll out your pizza dough. Spread it with pesto sauce, top with cheese, then the meat and vegetables. Bake as directed for whatever crust you are using.
Possible variations: Use feta cheese to replace part of the mozzarella. Grill the chicken breast and then slice it up after it is fully cooked.
